Japanese Brewery Plans to Create Space-Brewed Sake

In a groundbreaking venture that merges ancient traditions with futuristic ambitions, Japanese brewery Asahi Shuzo, famed for its premium sake brand “Dassai,” is preparing to craft sake in space. This innovative project aims to explore the potential of fermenting sake in microgravity, a step toward adapting traditional Japanese practices for a future beyond Earth.

Brewing Sake in Microgravity

The experiment involves sending the core ingredients for sake—rice, water, yeast, and koji mold—to the International Space Station (ISS) in late 2025. The fermentation process will occur in the unique environment of microgravity, offering scientists and brewers insights into how space conditions influence the creation of this beloved Japanese beverage.

Once the fermentation is complete, approximately 520 grams of unfiltered sake will be returned to Earth. This space-brewed sake will be carefully refined and bottled in a sleek, custom-designed 100-milliliter container named “Dassai Moon.” However, this extraordinary creation will come at a premium price—each bottle is expected to sell for a staggering $640,000. Proceeds from the sale will be donated to local companies working on the advancement of space-related technologies.

Pioneering Space Fermentation

This initiative is more than a marketing stunt; it has a larger purpose. The project aims to assess whether fermentation—a critical process for creating sake, miso, natto, and other Japanese staples—can occur successfully in space. With plans for lunar colonization during the 2040s, the ability to produce fermented foods and beverages in extraterrestrial environments could be pivotal for sustaining future space settlements.

By taking sake brewing into orbit, Asahi Shuzo is not only celebrating Japanese culture but also pushing the boundaries of innovation.
